We saved this one to make on Halloween.
It was the Baby Pumpkin Stuffed with Spiced Lentils and it was delicious! The pumpkin was chopped in half, roasted in the oven and filled with the spicy lentil filling, then topped with toasted almonds and chopped parsley.
We followed it up with a toffee apple each – spooktacular!
